Ingredients

  • 4 cups fresh strawberries, hulled and halved
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • ½ cup water

Instructions

  1. In a saucepan, combine strawberries and sugar. Let them sit for 15 minutes until strawberries release their juices.
  2. Mix cornstarch with water and lemon juice until smooth. Add to the saucepan.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
  4. Once thickened, remove from heat and let it cool to room temperature. It will thicken further upon cooling.

Notes

  • For a smoother filling, blend the cooked mixture before cooling.
  • Adjust sugar according to the sweetness of the strawberries.
  • Can be stored in the refrigerator for up to 5 days or frozen for 3 months.
