Instructions
- In a saucepan, combine strawberries and sugar. Let them sit for 15 minutes until strawberries release their juices.
- Mix cornstarch with water and lemon juice until smooth. Add to the saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
- Once thickened, remove from heat and let it cool to room temperature. It will thicken further upon cooling.
Notes
- For a smoother filling, blend the cooked mixture before cooling.
- Adjust sugar according to the sweetness of the strawberries.
- Can be stored in the refrigerator for up to 5 days or frozen for 3 months.
